Domaines Ott⋆ Étoile Rosé
Étoile stands apart from the appellation system. Released as Vin de France, it is an author’s wine: a free composition drawn from the finest cuvées of all three Domaines Ott⋆ estates, unbound by the rules of a single terroir and answerable only to the family’s own judgement. Nothing is predetermined — each vintage is created a new, and 2022 marks the first year of the estates certified organic farming.
The blend of Grenache and Mourvèdre unites the salinity of Clos Mireille, the smooth elegance of Château de Selle and the depth of Château Romassan. Bespoke ageing in stainless steel vats and spherical ceramic vessels preserves fresh, crisp fruit and a distinctly saline signature, while building a structure made for the cellar. “A great wine for the future and for sharing, which connects us to our terroirs,” says Jean-François Ott — a rosé of ambition, conceived for contemporary gastronomy and for time.
